CREATIVE MIXOLOGY

Ingredients

3cl Symphony 6
1cl lime cordial*
0.75cl honey water (1:1 honey:water ratio)
1 drop citric acid (5:1 water:acid ratio)
1 drop salt (5:1 water:acid ratio)
6cl soda water

Method

Combine Symphony 6, whiskey, cordial and acids over ice in a highball.
Top up with soda water.

 *To make lime cordial:

Combine 10 lime zests and 500g sugar ro do a oleo saccharum.
Add 150ml lime juice and 350ml water and 5 g citric acid. Dissolve and strain
