The Plum, I Suppose and Lemonade

Ingredients:
4.5cl The Plum, I Suppose
6x Fresh Raspberries
12cl Lemonade
Method:
Pour The Plum, I Suppose in a glass and muddle the raspberries with it. Add your ice and top up with the lemonade and stir.

Ingredients:
4cl The Plum, I Suppose
2cl Apricot Brandy
2cl Lime Juice
4cl Pineapple Juice
2cl Honey-Seaweed Syrup*
10-12 Mint Leaves
Method:
Combine ingredients in a blending cup, add half a scoop of crushed ice, and blend.
Pour into a cup and garnish with mint sprigs and pineapple leaves.
Honey-Seaweed Syrup*
2 parts honey
1 part water
2% dried seaweed
Add ingredients to a pot, bring to about 70c.
Keep for 15 mins or so.
Leave to infuse overnight.
Strain the following day.
Seaweed recommended: dúlse and kelp.
If these are not available, kombu also works well.

2.5cl Dry Vermouth
0.6cl/nice dash of Orange Blossom infused Helena (20% maceration)
15% dilution with water
Method:
Combine all ingredients and leave it in your freezer for at least an hour. Pour directly in your glass
The Plum, I Suppose and Amazake

4cl The Plum, I Suppose
6cl Amazake
2cl Cream
4cl Plum Juice
0.5cl Lime Juice
Pinch of Salt
Method:
Combine all ingredients in a shaker with ice.
Shake and strain.
Sprinkle a pinch of salt.
